Instructions
Cooking the fish
  1. Heat a non-stick or well seasoned cast iron frying pan on the stove over medium heat.
  2. Cut the fish fillets in half, roughly into square shaped pieces.
  3. Mix garlic powder, onion powder, and salt together. Sprinkle over both sides of the fillets, trying to season equally.
  4. Add the butter to the pan and allow it to melt. Swirling pan to coast the cooking surface.
  5. Once the butter begins to foam, add the fish fillets. If you do not have enough space on the pan, you may need to cook the fish in batches.
  6. Once the fish begins to brown on the bottom, and the edges are beginning to look cooked, flip the fillets over.
  7. Cook the second side of the fish. The fish is cooked once it begins to look flaky, and the bottom of the fish is browned as well. If you are using a thermometer, the temperature you are looking for is 145°F.
  8. Once the fish is done, move to a piece of paper towel to absorb the extra butter if desired.
Toasting the bun
  1. If you are toasting the buns, put them in the toaster, and use the bagel setting. Make sure to put the bun in so that only the inside of the bun is toasted.
Building the sandwich
  1. Once the bun is toasted, move it to a plate. Put the bottom half of the bun down, and place a slice of the American Cheese on the warm bun.
  2. Add one of the half fillets on top of the cheese
  3. Add the tartar sauce on top of the fish. I usually use about a tablespoon of tartar sauce, but you can adjust to your own tastes.
  4. Place the top half of the bun on top and serve.
Recipe Notes

Once you get the timing down making the sandwiches, you can toast the buns as you cook the fish.  I usually start toasting the buns once I flip the fish over and start to cook the second side of the fillet.
