Smoky Keto Chicken Meatloaf

My family enjoys meatloaf. They love when I make a smoked meatloaf. Up until I came up with this recipe, they didn’t quite like a smoked chicken meatloaf when I made it as much as one made with ground beef. Ground chicken doesn’t seem to have as much flavour as ground beef, and when making a keto meatloaf, especially with ground chicken, it seems to dry out more. With some work, I came up with this smoked keto chicken meatloaf that is juicy, tender, and delicious.

In the past, when I was making meatloaf, I always had trouble mixing the seasonings evenly throughout the ground meat. I would find pockets of seasoning in the meat, and other areas under seasoned. I solved this problem by mixing the dry seasonings into the shredded cheese. When I did this, and throughly mixed together the dry seasonings, and cheese, and then mixed the meatloaf, the seasoning was much more evenly distributed thoughout the meatloaf.

The Bacon Weave:

When I make a meatloaf, I usually add a bacon weave to it. Here are some detailed instructions on how to do a bacon weave.

If you do not have a smoker:

If you do not have a smoker, you can cook the keto chicken meatloaf in the oven. It will not be as smokey and flavourful, but it will still be a pretty good tasting meatloaf.

Instructions
Preparing ingredients
  1. Pre-heat the smoker (or oven) to 350°F.
  2. Stir the gelatin in to the chicken stock and set aside. (It should hydrate for 15 minutes before being used.)
  3. Mix together the ground black pepper, smoked paprika, parsley, onion powder, garlic powder, and granulated garlic and mix thoroughly.
  4. Add the mixed seasonings to the grated cheese, and toss to combine. The dry seasonings should distribute evenly over the cheese, coating it. Do this in a large bowl. Ideally large enough to hold all of the ingredients.
  5. Beat the eggs with a fork until they are uniform.
  6. Mix together the marmite, tomato paste, soy sauce, liquid smoke, Worcestershire sauce and stir together. Once mixed, stir this liquid mixture in to the gelatin and stock.
Forming the meatloaf
  1. In the large bowl with the cheese and dry seasonings, add the ground chicken, the liquid ingredients, and the beaten eggs.
  2. Use your hands to mix together evenly. Be careful not to over mix though, or you may end up with a tougher meatloaf texture. Once the ingredients are combined evenly, it is mixed enough.
  3. Lay down a piece of foil, and form the meatloaf on it. Shape it roughly into a "meatloaf" shape. It doesn't have to be perfect.

Bacon Weave (optional)
  1. Weave the bacon on top of the meatloaf in alternating strips.

Cooking the meatloaf
  1. If you are smoking the meatloaf, add some smoke wood to the smoker.
  2. Add the meatloaf to the smoker (or the oven) and cook it until it reaches 165°F. This should take 45 minutes to an hour.

  3. Remove the meatloaf from the smoker (or oven) and allow it to cool for 10 minutes before slicing and serving.
